Favorite Recipe of the Moment:
Found some terrific tomato basil linguini and cooked it up with some Italian sausage (have also used chicken) Added Parmesan cheese, capers, fresh mushrooms and tomatoes. Makes a wonderful meal without a lot of time in the kitchen. Add a salad or some fresh swiss chard or green beans and you can get out of the kitchen quick.
Warm soup for the cold weather-
Slow-cooker chicken soup with sweet potatoes, orange, and cilantro
3 lbs chicken thighs, cut into 1" cubes
Salt and pepper
4 tsp Olive oil
2 onions, chopped
2 jalapenos, stemmed seeded and minced
1 tbsp cumin
6 cloves garlic minced
1 can diced tomatoes (14.5 oz)
1 cup chicken broth
1 cup orange juice
zest from one orange (finely grated)
2 chipotle chiles in adobo sauce, chopped
1 tbsp minced fresh oregano or 1tsp dried
1 medium sweet potato (sliced in 1" chuncks)
1 cup carrots, sliced
1/4 cup minced fresh cilantro
8 oz sliced mushrooms
Cilantro Sour Cream
1 cup sour cream
2 tbsp minced fresh Cilantro
1 tbsp fresh lime juice
salt and pepper
1. Add oil to skillet. Add onions, jalapenos, cumin, and 1/4 tsp salt. Cook until onions are softened about 5 minutes. Stir in garlic and cook for 15 seconds. Stir in the tomatoes with their juice, bring to a simmer and then pour into slow cooker.
2. Add chicken thighs, broth, orange juice, orange zest, chipotles, sweet potato, carrots, and oregano to slow cooker. Cover and cook on low until chicken is tender, 5 hours.
3. Add mushrooms let simmer 30 more minutes. Add cilantro and season with salt and pepper to taste.
4. Mix all of the ingredients for the cilantro sour cream together and season with salt and pepper to taste.
